Recept: Vegan lasagna


Dit keer een recept van een voedseldeskundige Anna Cortesi. Zij is ook werkzaam bij YFoE Cyprus. In februari tijdens de Food and Agriculture meeting in Wenen hebben we kunnen genieten van dit recept. Anna was zo aardig geweest om het recept  met ons te delen!


Ok, so we need:
1 package dry lasagna
2-3 packages/bunches spinach
2 cups cooked lentils
1/2 cup chopped carrots
1/2 cup chopped onion
1/2 cup chopped mushrooms
200 grams tofu (cheese made from soya beans)
3 cups  tomato sauce, olive oil, salt, pepper, herbs and spices depending on preference :)

Soften the lasagna in hot water for 2-3 minutes. In a rectangular pan, put the first layer of lasagna to fill the bottom of the pan. In a large cooking pan, sprinkle some olive oil and start cooking the mushrooms until softened. Add the carrots, then the onions and then the tofu (has to be previously mashed and sprinkled)
Cook for 5 minutes and then add the rest of the ingredients including the tomato sauce. Cook the mixture for about 15 minutes until the ingresients are finely mixed together.

Back to the rectangular pan, put a thin layer of the mixture on top of the lasagna
Then add a layer of spinach.Then add a layer of lasagna. And continue the same process. Finish with lasagna on top. Sprinkle with vegan cheese on top of the lasagna.
Ps. Find a vegan cheese that really melts!
Cook in the oven until the pasta is cooked completely.
